Ingredients
6 eggs, lightly beaten
2 sprigs spring onion
4 flour tortillas
1 large tomato, diced
1/2 medium cucumber, diced
3/4 cup corn kernels
1/2 cup reduced fat grated cheese
Tabasco (optional)
Olive oil spray
Instructions
Lightly spray fry-pan with olive oil. Add eggs and spring onion to the pan – stir gently until eggs are cooked. In a separate bowl: combine tomato, corn and cucumber (add Tabasco for extra spice!). Warm tortillas according to packet directions. Fill tortillas evenly with scrambled eggs, tomato mixture and grated cheese. Roll tortillas and serve
Try adding different ingredients for new flavours! Avocado, Spanish onion, fresh green capsicum and spicy salsa all make great additions to the breakfast burrito.
