Spring Lamb Greek Salad

Ingredients

200g lamb rump steaks
Greek seasoning
2 cups lettuce
2 roma tomatoes
1/2 cup olives
1/2 avocado
1/2 cucumber
40g reduced fat feta
2 tablespoons reduced fat greek or natural yoghurt
2 tablespoons red wine vinegar
1 tablespoon lemon juice
1 teaspoon mixed Italian herbs
Olive oil spray

Instructions

Heat a fry pan with a spray of olive oil spray. Sprinkle lamb steaks with greek seasoning and put into the hot pan. Cook until browned and then turn. When cooked on both sides, move to a board to rest. Meanwhile, assemble a salad with the lettuce, chopped tomato and cucumber, olives, and avocado. Arrange on a plate. Crumble feta over the salads. Make a dressing with the red wine vinegar, lemon juice and herbs. Slice the lamb and arrange over the salad. Dollop the greek or natural yoghurt over the top. Serve and enjoy!
